Mozambique’s cuisine has a rich history, with ingredients like cassava, maize, paprika, bay leaves, olive oil, cinnamon, ginger, cumin, coriander, garlic, roasted coconut, tamarind, turmeric, chilli peppers and peanuts introduced during the Portuguese colonial period. Despite food shortages during times of conflict, women got creative with limited resources and created a vibrant culture around generational recipes. It’s a story that weaves together the country’s history and the communities that formed along its coastline, seeking new beginnings.
